Ingredients
- 2 cups bread flour
- 1 tsp instant yeast
- 3/4 tsp salt
- 3/4 cup warm water
- 2 tbsp olive oil, plus more for brushing
- 1 tsp honey
- Flaky salt
- Rosemary leaves
Instructions

Combine flour, yeast, salt, water, olive oil, and honey. Knead 5 minutes by hand or 3 minutes in a stand mixer. The dough should be smooth and slightly tacky.

Cover and let rise at room temperature for 60-90 minutes until doubled.

Divide into 4 balls and flatten each into an oval about 1/4 inch thick. Do not overwork, you want some air in the dough.

Preheat the electric grill to 500F (its maximum setting).

Brush one side of each flatbread with olive oil. Grill oiled-side down for 2-3 minutes until puffed and charred in spots.

Brush the top with more oil, flip, sprinkle with flaky salt and rosemary, and grill 2 more minutes.
