Balcony Electric Grill Kebabs (Beef or Chicken)

Kebabs are maybe the most underrated balcony grill recipe. They cook fast, use vegetables and protein together so you get a complete meal off one skewer, and they scale down from 4 skewers to 2 without changing the technique. The Weber Lumin Standard handles 4 full-sized kebabs comfortably, making this a proper dinner-party dish even from a balcony. The technical trick is cube size. Go 1.25 inches and the timing works out naturally, peppers and onions char at the same rate that beef reaches medium-rare. Deviate in either direction and you have to choose between burned vegetables or rare meat.
Ingredients
- 1.5 lbs beef sirloin (or chicken thigh), cut in 1.25-inch cubes
- 1/3 cup olive oil
- 3 tbsp red wine vinegar
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 2 bell peppers, cut in 1.25-inch squares
- 1 red onion, cut in 1.25-inch chunks
- 8 oz cremini mushrooms
- Metal skewers
Instructions

Whisk oil, vinegar, garlic, and all the spices together. Pour over the meat and marinate 30 minutes (beef) or 2 hours (chicken).

Thread skewers: alternate meat, pepper, onion, mushroom, meat, and so on. Leave a small gap between pieces so all sides can char.

Preheat the grill to 450F.

Grill 3 minutes per side for a total of 12 minutes, rotating to hit all four sides of each cube.

Pull at 130F internal for medium-rare beef, 165F for chicken. Rest 5 minutes on the skewers before sliding off.
Pro Tips
Tips for this cook
- ★1.25-inch cubes is the sweet spot. Smaller and the meat overcooks before the vegetables char; larger and the outside burns before the inside warms.
- ★Metal skewers beat bamboo. You can reuse them forever, they conduct heat into the center of each cube, and they do not require the pre-soak step.
- ★Alternate pieces by color and shape for dramatic presentation. Kebabs are as much about visual appeal as they are about flavor.
