20-Minute Ground Beef Kebabs

Kofta kebabs are the fastest way to turn ground beef into something that feels like a real cuisine. Twelve minutes of prep, eight minutes on the grill, done. The flavor architecture, cumin, coriander, cinnamon, allspice, is what distinguishes Middle Eastern kebabs from Mediterranean or American styles. Skip any one of those spices and the dish loses its identity.
Ingredients
- 1.5 lbs ground beef (80/20)
- 1/2 white onion, grated
- 3 cloves garlic, grated
- 1/4 cup finely chopped parsley
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp cinnamon
- 1/2 tsp allspice
- 1.5 tsp salt
- 1/2 tsp black pepper
- Metal skewers
Instructions

Mix everything gently in a bowl. Do not overwork.

Divide into 8 portions. Form each around a metal skewer into a long sausage shape about 5 inches long.

Chill the formed skewers on a plate while the grill preheats. Cold kebabs hold their shape better.

Preheat the grill to 450F.

Grill 4 minutes per side for a total of 8 minutes. Internal temp 160F.

Serve with warm pita, hummus, and pickled onions.
