Quick Grilled Chicken Caesar Salad

The grilled Caesar is one of those restaurant moves that makes absolutely no sense until you taste it. Charred romaine has an entirely different character than raw, the heat brings out sweetness and adds a smokiness that transforms the whole salad. Fifteen seconds per side is all it takes. This is a complete dinner off a single grill, which is exactly what a weeknight deserves.
Ingredients
- 2 boneless skinless chicken breasts, pounded to 3/4 inch
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 2 romaine hearts, halved lengthwise
- 4 thick slices sourdough
- 1/2 cup Caesar dressing
- 1/2 cup shaved Parmesan
- Lemon wedges
Instructions

Rub the pounded chicken with oil, salt, pepper, and garlic powder.

Preheat the grill to 425F.

Grill chicken 6 minutes per side, or until 165F internal.

In the last 3 minutes, grill the romaine halves cut-side down for 90 seconds each (just long enough for char marks, not until wilted).

Grill the sourdough slices for 1 minute per side in the last 2 minutes of cook time.

Slice the chicken. Plate the romaine, drizzle with Caesar, top with chicken, Parmesan, and grilled-bread croutons.
