Grilled Lobster Tails (Summer Special)

Grilled lobster tails are maybe the highest wow-per-effort ratio of any grill recipe. Ten minutes of cook time and the dish looks like the centerpiece of a $150-per-head seafood tasting menu. Ingredients
- 4 lobster tails (6-8 oz each)
- 4 tbsp butter, melted
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp cayenne
- Juice of 1 lemon
- 1 tbsp chopped parsley
- Flaky salt
- Lemon wedges
Instructions

Butterfly each tail: use kitchen shears to cut through the top shell down to the tail fin. Pull the meat up through the opening so it sits on top of the shell.

Whisk butter with garlic, paprika, cayenne, and lemon juice. Brush half over the exposed meat.

Preheat the grill to 425F.

Place tails shell-side down on the grill. Close the lid.

Cook 8-10 minutes, brushing with more butter every 2 minutes. The meat is done when it turns opaque white and the internal temp hits 140F.

Garnish with parsley, flaky salt, and lemon wedges. Serve with the remaining butter for dipping.

- ★Do not flip. Shell-side down only, the shell protects the meat, conducts heat gently, and makes plating easier.
