10-Minute Grilled Shrimp Scampi

Scampi is a dish built around timing: garlic-butter-lemon-wine needs to taste fresh, and that means everything has to come together within a minute or two. A grill gives you the bonus of char on the shrimp in addition to the sauce-based flavor. A 10-minute cook that delivers this much flavor is weeknight gold. Ingredients
- 1.5 lbs large shrimp, peeled and deveined
- 4 tbsp butter, melted
- 5 cloves garlic, minced
- 1/4 cup dry white wine
- Juice of 1 lemon
- 1/2 tsp red pepper flakes
- 1/4 cup chopped parsley
- Salt and pepper
Instructions

Whisk butter with garlic, wine, lemon juice, and red pepper flakes.

Toss shrimp with half the sauce. Reserve the other half.

Grill shrimp in a single layer for 90 seconds per side. Pull them the moment they turn opaque.

- ★Wine in the grilling sauce does not fully cook off in 90 seconds per side. That is a feature, you want the wine flavor. If you are wine-averse, substitute chicken broth.
